This piece of equipment may be new to you. Most have heard of and know what a pressure cooker is. But not so much a pressure canner.
The pressure canner is used to process any recipe involving meat, poultry, fish, or non-acidified vegetables. These pieces are available in cooking supply stores and the online retailers we have linked below.
Pressure Canners are large, tall, heavy pots that have two special features that we need for canning.
1. A lid that can be locked into place
2. A pressure regulating device

What’s a boiling-water canner?
If you’re wondering if this boiling-water canner has a special quality or shape for canning. It really doesn’t. It’s simply a larger pot that’s equipped with a lid and a rack. That’s it.
There are commercial-grade boiling-water canners that you can find at cooking supplies stores. But in most cases, it’s not even worth going out to get one. Check first to see if one of your pots can get the job done. It just has to be larger and deep, equipped with a lid and rack.
How large does the boiling-water canner need to be?
If you’re using one of your pots. It has to be large enough to completely immerse the jars in water. That’s the key. And that’s why smaller jars make this easier to do. Ideally, 2-4 inches deeper than the height of the jars is what people aim for.
The rack of the pot is used to lift the jars off the bottom of the pot to keep them away from the direct heat. Which allows the boiling water to heat the jars.
